On August 27, 1930, Inez H. Pierce of Chicago, Illinois filed patent for the first vacuum coffee maker that truly automated the vacuum brewing process, while eliminating the need for a stove top burner or liquid fuels.[1] An electrically heated stove was incorporated into the design of the vacuum brewer. Water was heated in a recessed well, which reduced wait times and forced the hottest water into the reaction chamber. Once the process was complete, a thermostat using bi-metallic expansion principles shut off heat to the unit at the appropriate time. Pierce's invention was the first truly "automatic" vacuum coffee brewer, and was later incorporated in the Farberware Coffee Robot.

This means that the machine consistently pulled a slightly-sweet, creamy shot of espresso. It had plenty of crema on top. Steaming milk is straightforward, utilizing a simple on/off switch, and we got some stunning microfoam. However, the process isn’t flawless. You’ll need to prime the steam wand prior to using it on your milk, or else water will drip into your pitcher as the steam begins to sputter out. This sputtering caused us to have a few larger bubbles, frowned upon by hardcore espresso lovers.

The founder of the La Pavoni company bought the patent and from 1905 produced espresso machines commercially on a small scale in Milan. Multiple machine designs have been created to produce espresso. Several machines share some common elements, such as a grouphead and a portafilter. An espresso machine may also have a steam wand which is used to steam and froth liquids (such as milk) for coffee drinks such as cappuccino and caffe latte.
If you're ready to pull the trigger on buying an espresso machine, be prepared to shell out a little cash. Espresso machines can be wildly expensive. Rightfully so. Pulling a perfect shot requires precision: the machine must maintain both precise temperature and stable pressure throughout the brewing process. Achieving this stability is difficult and requires complex machinery, which is why you can find machines for upwards of 6,000 dollars.

Although it's very easy to use — you just fill the portafilter with grounds, attach it to the machine, and press the button to start — The Gaggia Classic isn't as flexible or intuitive as the Breville Barista Express. The user manual is less detailed, too, so you have to have a basic idea of what you're doing or browse the internet for tips. The machine has a one-year warranty if you run into problems.

All of the espresso machines we tested only included a single boiler for heating. This means that there's only one mechanism for heating both the water for brewing and the steamer wand. Because of this, it'll take the steamer wand a while to heat up after pulling the espresso shot, since the steamer wand operates at a much higher temperature than the brewing temperature of around 195°F. It is possible to buy a home machine with a double boiler (Breville makes one) but this raises the price significantly (we didn't test the Breville because it's over $1,000), and the minor wait time wasn't a major concern for us. We figured it wouldn't be for home brewers either.

Domestic electrification simplified the operation of percolators by providing for a self-contained, electrically powered heating element that removed the need to use a stovetop burner. A critical element in the success of the electric coffee maker was the creation of safe and secure fuses and heating elements. In an article in House Furnishing Review, May 1915, Lewis Stephenson of Landers, Frary and Clark described a modular safety plug being used in his company's Universal appliances, and the advent of numerous patents and innovations in temperature control and circuit breakers provided for the success of many new percolator and vacuum models. While early percolators had utilized all-glass construction (prized for maintaining purity of flavor), most percolators made from the 1930s were constructed of metal, especially aluminum and nickel-plated copper.
While it’s hands down the best cheap espresso machine on the market, Mr. Coffee isn’t on the same level with the Rocket or the Breville. Its shots lack the richness and complexity of true espresso, tasting more like a full-bodied Americano. Its layer of crema disappears quickly, and its shots don’t offer the gorgeous, gradient colors that you’d get from a machine like the Rocket. That said, it ranked fourth for taste among the machines we tested, so it’s still a solid option if you don’t need the finest coffee quality the market has to offer.

Finally, the design and extra tools that the Breville machine comes with are impeccable. It includes a large drip tray to catch spilled coffee and milk and has a sensor that lets you know when the tray is too full. It also has a compartment under the drip tray that allows you to store the extra filters the machine comes with. It includes a hefty, stainless steel milk steaming jug and a tamper for pressing the expresso grounds down. Other machines' tampers are made of flimsy plastic that left loose grounds around the sides of the portafilter, but the Breville tamper is made of thick, durable plastic and metal. It's strong enough to actually work well at compacting the grounds, plus it's perfectly sized to fit the entire circumference of the portafilter, reaching all of the grounds and not leaving loose stragglers. There's also a magnetic slot on the machine where you can house the tamper. It can be used while it's attached to the top of the machine, or taken down for more leverage—this is an impressive extra design feature, since the many parts required in making espresso can make for clutter.


A steam-driven unit operates by forcing water through the coffee by using steam or steam pressure. The first espresso machines were steam types, produced when a common boiler was piped to four group heads so that multiple types of coffee could be made at the same time.[2] This design is still used today in lower-cost consumer machines, as it does not need to contain moving parts. Also, steam-driven machines do not produce as high of a pressure for extraction compared to pump-driven. This results in the crema, a hallmark of an espresso, being of lower quality.

An Illinois farmer named Hanson Goodrich is generally credited with patenting the modern percolator. ‡Pre-Infusing: Pre-infusing is a technique where the dry coffee grounds are initially saturated with hot water, allowing a “bloom” of carbon dioxide to escape. This 45-second(ish) process puts hot water into contact with more surface area around each ground throughout the brewing process, as it’s no longer competing with the escaping gas bubbles. It can improve the quality of the final product, since this more uniform contact creates a more even extraction. It’s a feature that six of the 10 pots we tested incorporated into their designs — as well as all four of our top picks.
