The method for making coffee in a percolator had barely changed since its introduction in the early part of the 20th century. However, in 1970 General Foods Corporation introduced Max Pax, the first commercially available "ground coffee filter rings". The Max Pax filters were named so as to compliment General Foods' Maxwell House coffee brand. The Max Pax coffee filter rings were designed for use in percolators, and each ring contained a pre-measured amount of coffee grounds that were sealed in a self-contained paper filter. The sealed rings resembled the shape of a doughnut, and the small hole in the middle of the ring enabled the coffee filter ring to be placed in the metal percolator basket around the protruding convection (percolator) tube.

I have had this machine for almost a year now and waited to write a review until now so I wasn’t blinded by the initial excitement of purchasing a home espresso machine. Pierce's design was later improved by U.S. appliance engineers Ivar Jepson, Ludvik Koci, and Eric Bylund of Sunbeam in the late 1930s. As for the seller: when the unit was originally delivered the steam wand wasn't performing well. After following the typical trouble-shooting tips and conferring with the seller, we found the unit was simply unable to produce enough pressure to steam or properly brew. Within a week the seller had replaced the unit, and I'm happy to report it works perfectly. No matter the production value there is always a possibility of a defect here or there. A steam-driven unit operates by forcing water through the coffee by using steam or steam pressure. The principle of a vacuum brewer was to heat water in a lower vessel until expansion forced the contents through a narrow tube into an upper vessel containing ground coffee. When the lower vessel was empty and sufficient brewing time had elapsed, the heat was removed and the resulting vacuum would draw the brewed coffee back through a strainer into the lower chamber, from which it could be decanted. The Bauhaus interpretation of this device can be seen in Gerhard Marcks' Sintrax coffee maker of 1925.

"If I could give this more than 5 stars I would. I love espresso drinks from coffee shops, I used to drink just regular coffee but when I quit smoking the taste changed just enough that I didn't like it anymore. Mexican mochas on the other hand I still found palatable. But they're about 5 bucks a pop at my local coffee shop. Put some full city roast in their and fire it up and what comes out is espresso. But its playing the part convincingly, I can't tell the difference between what comes out of this and a shot of espresso. Its paid for itself a dozen times over at this point. There were lots of innovations from France in the late 18th century. With help from Jean-Baptiste de Belloy, the Archbishop of Paris, the idea that coffee should not be boiled gained acceptance. The first modern method for making coffee using a coffee filter—drip brewing—is more than 125 years old, and its design had changed little. The biggin, originating in France ca. 1780, was a two-level pot holding coffee in a cloth sock in an upper compartment into which water was poured, to drain through holes in the bottom of the compartment into the coffee pot below. Coffee was then dispensed from a spout on the side of the pot. The quality of the brewed coffee depended on the size of the grounds - too coarse and the coffee was weak; too fine and the water would not drip the filter. A major problem with this approach was that the taste of the cloth filter - whether cotton, burlap or an old sock - transferred to the taste of the coffee. Around the same time, a French inventor developed the "pumping percolator", in which boiling water in a bottom chamber forces itself up a tube and then trickles (percolates) through the ground coffee back into the bottom chamber. Among other French innovations, Count Rumford, an eccentric American scientist residing in Paris, developed a French Drip Pot with an insulating water jacket to keep the coffee hot. Also, the first metal filter was developed and patented by French inventor.
Steaming milk is straightforward, utilizing a simple on/off switch, and we got some stunning microfoam. However, the process isn’t flawless. You’ll need to prime the steam wand prior to using it on your milk, or else water will drip into your pitcher as the steam begins to sputter out. This sputtering caused us to have a few larger bubbles, frowned upon by hardcore espresso lovers.

Tamp: To ensure the espresso is evenly packed, your machine comes with a tamp, which you’ll press into the basket against the grounds. This step is important: When you pull a shot, the water will go to the place of least resistance, avoiding densely packed areas. This denser espresso won’t be properly saturated, making it under-extracted and sour, while the looser espresso will be over-extracted and bitter.


The next is the machine’s auto-pause. If you remove the carafe before your full pot is done brewing, the flow will stop until the carafe goes back in. It’s not a perfect system. There are a few inevitable drips that add an extra step to clean-up, and if the water is held up in the brew basket for too long, it increases the chance of over-extraction. But if you want a great first cup to sip on while the rest of your pot is brewing, you’ll get it in a much more satisfying time frame.
