It’s not that cone filters won’t make a great cup of coffee — the OXO On 9-Cup still ranked fifth out of 10 in our taste test. But flat bottoms generally allow for the grounds to be more evenly extracted and increase the coffee’s flavor. (It’s no coincidence our other three recommendations have flat-bottom brew baskets). You may have to do a little more tweaking to get this coffee maker’s brew to the best it can be, and that’s the other reason we like the 12-cupper more. This smaller version doesn’t let you tinker with water temperature.

That water is heated in a detachable reservoir that doubles as a kettle. This is a unique feature for a coffee maker, but one we ended up appreciating, especially for households with a mix of tea lovers and instant-oatmeal eaters alongside coffee drinkers. Fill the kettle up, lock it in place, and scroll the dial to the amount of coffee you want brewed. The machine is designed so that, even if you have more water in the kettle than you need, it will brew only the amount you specify. The one thing you actually have to measure with the OXO On 12-Cup is the grounds. Do that right, and it’s pretty much impossible to screw it up.
The bottom chamber contains the water. The middle chamber is a filter-basket holding the ground coffee and sits within the bottom chamber. The top chamber, with a metal filter, screws onto the bottom chamber. When the pot is heated on a stove, the pressure from the steam in the bottom chamber forces the water through a tube into the filter-basket, through the ground coffee, the metal filter, and it then funnels into the top chamber where the coffee is then ready to serve. But you won’t want to use them the same day that they’ve been roasted — they need a few days to de-gas from the roasting process.

But let’s go ahead and get its biggest downside right out there in the open. Of the 10 machines we tested, it took the longest to brew eight cups of coffee — nearly 15 minutes. It heats its entire reservoir of water to temperature before a drop touches the grounds, and if you’re jonesing for a full pot to start off your day, that wait is going to feel like a lifetime. This was particularly noticeable considering four of the machines we tested brewed the same amount of coffee in less than half that time. The Bunn BTX-B Velocity Brew could do it in three minutes flat.
An early variant technique, called a balance siphon, was to have the two chambers arranged side-by-side on a sort of scale-like device, with a counterweight attached opposite the initial (or heating) chamber. Once the near-boiling water was forced from the heating chamber into the brewing one, the counterweight was activated, causing a spring-loaded snuffer to come down over the flame, thus turning "off" the heat, and allowing the cooled water to return to the original chamber. In this way, a sort of primitive 'automatic' brewing method was achieved.
Programmable coffee makers exist to make the brewing process as painless as possible. Single-cup coffee machines are designed for both home and commercial use.
Semi-automatic machines are not quite as customizable as a manual machine, but they let you play with a lot: You can change the coarseness of the coffee you use, the amount of coffee you add, and how long you pull your shot. Expect a decent learning curve to figure things out, and know that you’ll also need some additional equipment, like a quality coffee grinder.

This model earns a rating of Very Good in CR’s brew-performance tests and makes a full pot in just 9 minutes. It offers brew-strength control, programming, and a permanent coffee filter. With its performance and striking appearance, you might not mind having it out on the counter—especially in a kitchen with a stainless fridge and range.
