Dual-boiler espresso systems are undoubtedly the gold standard for home or commercial equipment: They allow the machine to maintain the optimum temperature for simultaneously brewing espresso coffee (195–205 degrees Fahrenheit) as well as for creating steam (closer to 250 degrees Fahrenheit), which means no waiting around, watching your crema disappear while you wait to steam milk. To find espresso machines that perfect the balance between simple design, customizable settings, and delicious espresso, we began by compiling a list of machines recommended by espresso-centric websites like Clive Coffee and Seattle Coffee Gear. We were selective about which brands we chose, skipping the popular Rancilio Silvia Espresso Machine after reading Home-Barista’s lukewarm review of it. We wanted machines that were both well-known and well-regarded. After looking at top sellers from Amazon and Bed Bath & Beyond, we also included the Mr. Coffee Cafe Barista. This addition drew the skepticism of the coffee experts we spoke with, but we couldn’t ignore its 1,700 Amazon reviews.
We tested 12 models by making shots of espresso and lattes on each machine. We enlisted the help of an expert from Students of Coffee, a group of coffee educators and roasters at New York University, to judge for quality. The majority of the models we tested were semi-automatic, meaning brewers still have to grind the coffee and pack it in the portafilter (the little filter cup with a wand that you place in the front of the machine). Semi-automatic espresso machines heat the water for you, and then pump it through the grounds at varying levels of pressure, depending on the machine. The semi-automatic models we tester were:

In France, in about 1710, the Infusion brewing process was introduced. This involved submersing the ground coffee, usually enclosed in a linen bag, in hot water and letting it steep or "infuse" until the desired strength brew was achieved. Nevertheless, throughout the 19th and even the early 20th centuries, it was considered adequate to add ground coffee to hot water in a pot or pan, boil it until it smelled right, and pour the brew into a cup.
The impact of science and technological advances as a motif in post-war design was eventually felt in the manufacture and marketing of coffee and coffee-makers. Consumer guides emphasized the ability of the device to meet standards of temperature and brewing time, and the ratio of soluble elements between brew and grounds. The industrial chemist Peter Schlumbohm expressed the scientific motif most purely in his "Chemex" coffeemaker, which from its initial marketing in the early 1940s used the authority of science as a sales tool, describing the product as "the Chemist's way of making coffee", and discussing at length the quality of its product in the language of the laboratory: "the funnel of the CHEMEX creates ideal hydrostatic conditions for the unique... Chemex extraction." Schlumbohm's unique brewer, a single Pyrex vessel shaped to hold a proprietary filter cone, resembled nothing more than a piece of laboratory equipment, and surprisingly became popular for a time in the otherwise heavily automated, technology-obsessed 1950s household.
An early variant technique, called a balance siphon, was to have the two chambers arranged side-by-side on a sort of scale-like device, with a counterweight attached opposite the initial (or heating) chamber. Once the near-boiling water was forced from the heating chamber into the brewing one, the counterweight was activated, causing a spring-loaded snuffer to come down over the flame, thus turning "off" the heat, and allowing the cooled water to return to the original chamber. In this way, a sort of primitive 'automatic' brewing method was achieved.
The Baratza Encore is simplicity defined and our top coffee grinder. That said, it’s not as elegant to use as the OXO machines. (Nor is it as nice to look at. One tester described its tall, bulbous body and squat carafe as “UFO-like.”) Take its eight-button controls, for example, which you use to toggle among brew modes, scroll up and down within the menu, and engage a manual brewing feature. Programming it to start brewing at a certain time was about as intuitive as setting an alarm on a clock radio — easy enough, but more technical than sleek. OXO definitely feels like the future; Behmor is more, “If it ain’t broke, why fix it?”

Espresso shots need to be pulled between 186 and 194 degrees F. If the water is too cold when it hits the espresso, the shot tastes sour. Too hot, and it tastes burnt. It’s trickier to hit this window if you also want your machine to steam milk, since steam requires a higher temperature — at least 212 degrees. But we struggled to get several of our machines just to pull decent espresso, never mind the milk. Sour shots were a clear sign that the water wasn’t hot enough; scorched shots indicated that the water climbed over 200 degrees.

At the beginning of the twentieth century, although some coffee makers tended to uniformity of design (particularly stovetop percolators), others displayed a wide variety of styling differences. In particular, the vacuum brewer, which required two fully separate chambers joined in an hourglass configuration, seemed to inspire industrial designers. That said, there is a true magic to having espresso at home, making yourself a cappuccino in your pajamas, and avoiding awkwardly waiting around the end of a bar with a cluster of strangers, all desperate to grab the first latte that hits the counter. A good grinder: An even grind is essential for drinkable espresso. In fact, if you’re trying to save money, most experts recommend cheaping out on your espresso machine rather than your grinder.
