This testing was designed to highlight the difference in how each machine extracted its coffee grounds. Remember, extraction is tied to water temperature, how long the grounds had to steep, and how evenly that water is distributed in the brew basket. (Depending on how the machine distributes the water and the shape of the basket, any particular ground may or may not receive the same amount of time in contact with water — thus any individual grind may be over-extracted, under-extracted, or just right.) Properly extracted grounds would have a balance of notes and aromas, from slight hints of acid to a pleasant amount of bitterness.
The method for making coffee in a percolator had barely changed since its introduction in the early part of the 20th century. However, in 1970 General Foods Corporation introduced Max Pax, the first commercially available "ground coffee filter rings". The Max Pax filters were named so as to compliment General Foods' Maxwell House coffee brand. The Max Pax coffee filter rings were designed for use in percolators, and each ring contained a pre-measured amount of coffee grounds that were sealed in a self-contained paper filter. The sealed rings resembled the shape of a doughnut, and the small hole in the middle of the ring enabled the coffee filter ring to be placed in the metal percolator basket around the protruding convection (percolator) tube.

These machines automatically grind the coffee, tamp it, and extract the espresso shot. The operator only has to fill the bean hopper and, if the machine is not connected to a water line, add water to a reservoir. Some models contain an automated milk frothing and dispensing device. Super-automatic machines take away the ability to manually tamp and grind the coffee, which may affect the quality of the espresso.

An electric drip coffee maker can also be referred to as a dripolator. It normally works by admitting water from a cold water reservoir into a flexible hose in the base of the reservoir leading directly to a thin metal tube or heating chamber (usually, of aluminum), where a heating element surrounding the metal tube heats the water. The heated water moves through the machine using the thermosiphon principle. Thermally-induced pressure and the siphoning effect move the heated water through an insulated rubber or vinyl riser hose, into a spray head, and onto the ground coffee, which is contained in a brew basket mounted below the spray head. The coffee passes through a filter and drips down into the carafe. A one-way valve in the tubing prevents water from siphoning back into the reservoir. A thermostat attached to the heating element turns off the heating element as needed to prevent overheating the water in the metal tube (overheating would produce only steam in the supply hose), then turns back on when the water cools below a certain threshold. For a standard 10-12 cup drip coffeemaker, using a more powerful thermostatically-controlled heating element (in terms of wattage produced), can heat increased amounts of water more quickly using larger heating chambers, generally producing higher average water temperatures at the spray head over the entire brewing cycle. This process can be further improved by changing the aluminum construction of most heating chambers to a metal with superior heat transfer qualities, such as copper.

On August 27, 1930, Inez H. Pierce of Chicago, Illinois filed patent for the first vacuum coffee maker that truly automated the vacuum brewing process, while eliminating the need for a stove top burner or liquid fuels.[1] An electrically heated stove was incorporated into the design of the vacuum brewer. Water was heated in a recessed well, which reduced wait times and forced the hottest water into the reaction chamber. Once the process was complete, a thermostat using bi-metallic expansion principles shut off heat to the unit at the appropriate time. Pierce's invention was the first truly "automatic" vacuum coffee brewer, and was later incorporated in the Farberware Coffee Robot.

In 1901, Luigi Bezzera of Milan patented improvements to the machine. Bezzera was not an engineer, but a mechanic. He patented a number of improvements to the existing machine, the first of which was applied for on the 19th of December 1901. It was titled "Innovations in the machinery to prepare and immediately serve coffee beverage" (Patent No. 153/94, 61707, granted on the 5th of June 1902). When you’re looking for an espresso maker, you have a few different options. Electric espresso makers are popular choices, and they make creating your own espresso drinks quick and easy. This type of machine feeds pressurized water through a series of tubes in the device, heats it up and then feeds it through compacted grounds. Manual or semi-automatic machines offer more control of shot quality. Because when to cut the shot (brew time) is a critical variable, which is often adjusted shot-by-shot, semi-automatic machines are often preferred over automatics, though some machines are automatic.[4] Manual machines are more popular in Europe, where it is more common to drink straight espresso.

“Self-identified coffee snob. Couldn’t be happier. Easy to operate, functions as advertised, instructions are clear. The metal filter included does what it needs to do. I recommend a relatively coarse grind (imagine the feel of cornmeal) with the metal filter to get the full flavor of the coffee. If you’re a bit of a coffee snowflake (no disrespect intended) and don’t like the ‘mud’ at the bottom of the cup, you should stick with the paper filter. The next is the machine’s auto-pause. If you remove the carafe before your full pot is done brewing, the flow will stop until the carafe goes back in. It’s not a perfect system. But if you want a great first cup to sip on while the rest of your pot is brewing, you’ll get it in a much more satisfying time frame.
Moka pots, also known as stove top espresso makers, are similar to espresso machines in that they brew under pressure and the resulting brew shares some similarities, but in other respects differ. As such, their characterization as "espresso" machines is at times contentious, but due to their use of pressure and steam for brewing, comparable to all espresso prior to the 1948 Gaggia, they are accepted within broader uses of the term, but distinguished from standard modern espresso machines.
