In the semi-automatic machine, water pressure and temperature must be stable and consistent, and according to our expert, the pressure shouldn't be too high. Typically, coffee is brewed at a pressure of about 10 bars, and an ideal water temperature is around 195 degrees. Generally, the more expensive the machine, the better the equipment inside that regulates these two factors. High-quality machines tend to have a mechanism called a PID, or proportional-integral-derivative, controller. The PID's function is to maintain constant water temperature with extreme accuracy, down to the degree. Two central problems plaguing inexpensive espresso machines is that they lack a PID, meaning the temperature of the brewing water can fluctuate up and down and yield inconsistent results. Inexpensive machines often advertise that they have 15 or 20 bars of pressure as a selling point. But, higher pressure is not the priority, and too much pressure can actually lead to over-extraction and bitterness in your espresso shot. Therefore, we looked for a machine with good temperature and pressure control.
A good grinder: An even grind is essential for drinkable espresso. In fact, if you’re trying to save money, most experts recommend cheaping out on your espresso machine rather than your grinder. Since we wanted to make sure our machines had the best chance of making great espresso, we started with a $600 grinder recommended to us by Seattle Coffee Gear.
A grouphead (or group head) is the receiver for the removable portafilter (or group handle). A typical consumer espresso machine normally has only one grouphead, while popular professional machines, such as those used at commercial coffee shops, can contain anywhere from one to seven. During the process of extracting a shot of espresso, hot water is forced through the grouphead under pressure. The grouphead contains many holes (the shower) that attempt to distribute the pressurised water evenly over the surface of the grinds in the portafilter basket and thereby achieve an even cross sectional flow.
Espresso machines can be intimidating. We wanted something that did not require reading a novel-sized manual, watching a lot of YouTube videos, or reading tons of articles about espresso pulling. Yes, making espresso does require some learning for the home brewer. That's part of the fun, but the machine shouldn't be discouraging and impossible to use out of the box.

An espresso machine brews coffee by forcing pressurized water near boiling point through a "puck" of ground coffee and a filter in order to produce a thick, concentrated coffee called espresso. The first machine for making espresso was built and patented in 1884 by Angelo Moriondo of Turin, Italy. An improved design was patented on April 28, 1903, by Luigi Bezzera. The founder of the La Pavoni company bought the patent and from 1905 produced espresso machines commercially on a small scale in Milan. Multiple machine designs have been created to produce espresso. Several machines share some common elements, such as a grouphead and a portafilter. An espresso machine may also have a steam wand which is used to steam and froth liquids (such as milk) for coffee drinks such as cappuccino and caffe latte.
The Baratza Encore is simplicity defined and our top coffee grinder. This burr grinder has a 40-setting grind size selector, an on-off switch for continuous grinding, and a push-button for manual control. That's it. Other grinders include complicated timers, built-in scales, strength adjustment sliders, and other doodads, but Baratza suggests that you don't need them—and they're right. Measure your beans using a separate scale, grind them fresh for each cup. That's the way to do it.
An early variant technique, called a balance siphon, was to have the two chambers arranged side-by-side on a sort of scale-like device, with a counterweight attached opposite the initial (or heating) chamber. Once the near-boiling water was forced from the heating chamber into the brewing one, the counterweight was activated, causing a spring-loaded snuffer to come down over the flame, thus turning "off" the heat, and allowing the cooled water to return to the original chamber. In this way, a sort of primitive 'automatic' brewing method was achieved.

Tamp: To ensure the espresso is evenly packed, your machine comes with a tamp, which you’ll press into the basket against the grounds. This step is important: When you pull a shot, the water will go to the place of least resistance, avoiding densely packed areas. This denser espresso won’t be properly saturated, making it under-extracted and sour, while the looser espresso will be over-extracted and bitter.
‡Pre-Infusing: Pre-infusing is a technique where the dry coffee grounds are initially saturated with hot water, allowing a “bloom” of carbon dioxide to escape. This 45-second(ish) process puts hot water into contact with more surface area around each ground throughout the brewing process, as it’s no longer competing with the escaping gas bubbles. It can improve the quality of the final product, since this more uniform contact creates a more even extraction. It’s a feature that six of the 10 pots we tested incorporated into their designs — as well as all four of our top picks.
